Chicken and Quinoa Salad:
Ingredients:
- 2 boneless, skinless chicken breasts
- 1 cup cooked quinoa
- 2 cups mixed salad greens
- 1 cucumber, diced
- 1 carrot, shredded
- Cherry tomatoes, halved
- 2 tablespoons extra-virgin olive oil
- Juice of 1 lemon
- Salt and pepper to taste
Instructions:
- Season the chicken breasts with salt and pepper and grill or bake them until cooked through. Let them cool and slice into strips.
- In a large bowl, combine the cooked quinoa, salad greens, cucumber, carrot, and cherry tomatoes.
- In a separate small bowl, whisk together olive oil, lemon juice, salt, and pepper to make the dressing.
- Add the chicken strips to the salad and drizzle with the dressing.
