Chicken and Quinoa Salad:


  • 2 boneless, skinless chicken breasts
  • 1 cup cooked quinoa
  • 2 cups mixed salad greens
  • 1 cucumber, diced
  • 1 carrot, shredded
  • Cherry tomatoes, halved
  • 2 tablespoons extra-virgin olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste


  • Season the chicken breasts with salt and pepper and grill or bake them until cooked through. Let them cool and slice into strips.
  • In a large bowl, combine the cooked quinoa, salad greens, cucumber, carrot, and cherry tomatoes.
  • In a separate small bowl, whisk together olive oil, lemon juice, salt, and pepper to make the dressing.
  • Add the chicken strips to the salad and drizzle with the dressing.
  • Toss everything together until well combined.
  • Serve the chicken and quinoa salad as a healthy and refreshing meal.
