Chicken and Vegetable Stir-Fry:
Ingredients:
- 2 boneless, skinless chicken breasts, thinly sliced
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon honey
- 1 tablespoon cornstarch
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 cup broccoli florets
- Salt and pepper to taste
- Sesame seeds for garnish (optional)
Instructions:
- In a bowl, whisk together soy sauce, honey, and cornstarch. Set aside.
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add garlic and chicken slices to the skillet and stir-fry until the chicken is cooked through.
- Add the bell pepper, zucchini, and broccoli to the skillet and continue to stir-fry for a few minutes until the vegetables are tender-crisp.
- Pour the soy sauce mixture over the chicken and vegetables, stirring well to coat everything evenly.
- Cook for another minute or until the sauce thickens slightly.
- Season with salt and pepper to taste.
- Sprinkle with sesame seeds before serving.
