Grilled Mahi Mahi with Lemon Herb
Ingredients:
- 4 Mahi Mahi fillets (6-8 ounces each)
- 2 tablespoons olive oil
- Salt and pepper to taste
- For the Lemon Herb Sauce:
- Juice of 1 lemon
- Zest of 1 lemon
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
1. Preheat your grill to medium-high heat.
2. In a small bowl, combine the lemon juice, lemon zest, parsley, dill, minced garlic, olive oil, salt, and pepper. This will be the lemon herb sauce for the Mahi Mahi.
3. Brush both sides of the Mahi Mahi fillets with olive oil and season with salt and pepper.
4. Place the Mahi Mahi fillets on the preheated grill. Cook for about 4-5 minutes per side, or until the fish is opaque and flakes easily with a fork. Avoid overcooking to prevent the fish from becoming dry.
5. While the Mahi Mahi is grilling, prepare the lemon herb sauce. In a small saucepan, heat the lemon herb sauce mixture over low heat, stirring occasionally until warmed through.
6. Once the Mahi Mahi is cooked, remove it from the grill and transfer it to a serving plate.
7. Drizzle the lemon herb sauce over the grilled Mahi Mahi fillets, or serve it on the side as a dipping sauce.
8. Garnish with additional fresh herbs, if desired.
9. Serve the grilled Mahi Mahi hot with a side of steamed vegetables, brown rice, or a fresh salad for a complete and healthy meal.
