Garlic Butter Shrimp Stir-Fry:
Ingredients:
- 1 pound shrimp, peeled and deveined
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small zucchini, sliced
- 1 cup sugar snap peas
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
- In a large skillet or wok, melt the butter over medium heat.
- Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.
- Add the shrimp to the skillet and cook for 2-3 minutes until they turn pink.
- Add the sliced bell peppers, zucchini, and sugar snap peas to the skillet. Stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
- Season with salt and pepper to taste.
- Garnish with fresh parsley before serving.
- Note: This quick and flavorful stir-fry can be served over brown rice or quinoa for a satisfying meal. Feel free to add additional vegetables of your choice for added variety.
