Baked Trout with Roasted Vegetables
Ingredients:
- 2 fresh trout fillets (about 6-8 ounces each)
- 2 cups mixed vegetables (such as bell peppers, zucchini, cherry tomatoes, and red onion), sliced
- 2 tablespoons olive oil
- 1 tablespoon fresh lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
1. Preheat your oven to 400°F (200°C).
2. Place the sliced mixed vegetables in a large mixing bowl. Drizzle with olive oil, lemon juice, minced garlic, dried thyme, salt, and pepper. Toss until the vegetables are well coated with the seasoning mixture.
3. Line a baking sheet with parchment paper or lightly grease it with olive oil. Spread the seasoned vegetables evenly on the baking sheet.
4. Place the trout fillets on top of the vegetables, skin-side down. Season the trout fillets with salt, pepper, and a drizzle of olive oil.
5. Bake in the preheated oven for about 15-18 minutes, or until the trout is cooked through and flakes easily with a fork. The vegetables should be tender and slightly charred.
6. Remove the baking sheet from the oven and let it cool for a few minutes.
7. Carefully transfer the trout fillets and roasted vegetables to serving plates.
8. Garnish with freshly chopped parsley.
9. Serve the baked trout with roasted vegetables alongside a side of quinoa, brown rice, or steamed greens for a well-rounded and healthy meal.
