Lemon Garlic Grilled Shrimp Skewers:
Ingredients:
- 1 pound large shrimp, peeled and deveined
- Juice of 2 lemons
- Zest of 1 lemon
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Wooden skewers, soaked in water for 30 minutes
Instructions:
- In a bowl, whisk together lemon juice, lemon zest, garlic, olive oil, salt, and pepper.
- Add the shrimp to the bowl and toss to coat them evenly with the marinade. Let them marinate for 15-20 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated shrimp onto the soaked wooden skewers.
- Grill the shrimp skewers for about 2-3 minutes per side until they are cooked through and opaque.
- Note: Be careful not to overcook the shrimp as they can become tough. Serve hot as an appetizer or with a salad for a light and refreshing meal.
