 Seared Scallops with Mango Salsa:


  • 1 pound sea scallops
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • For the mango salsa:
    • 1 ripe mango, peeled and diced
    • 1/2 red bell pepper, diced
    • 1/4 red onion, diced
    • Juice of 1 lime
    • Fresh cilantro, chopped
    • Salt and pepper to taste


  • Pat the scallops dry with a paper towel and season them with salt and pepper.
  • Heat olive oil in a skillet over medium-high heat.
  • Add the scallops to the skillet and sear them for about 2-3 minutes per side until they are golden brown and opaque in the center.
  • Meanwhile, in a bowl, combine all the ingredients for the mango salsa and toss gently to mix.
  • Serve the seared scallops with the mango salsa on top.

  • Note: Scallops cook quickly, so avoid overcooking them to maintain their tender texture. This dish pairs well with a side of brown rice or quinoa.
