Seared Scallops with Mango Salsa:
Ingredients:
- 1 pound sea scallops
- 1 tablespoon olive oil
- Salt and pepper to taste
- For the mango salsa:
- 1 ripe mango, peeled and diced
- 1/2 red bell pepper, diced
- 1/4 red onion, diced
- Juice of 1 lime
- Fresh cilantro, chopped
- Salt and pepper to taste
Instructions:
- Pat the scallops dry with a paper towel and season them with salt and pepper.
- Heat olive oil in a skillet over medium-high heat.
- Add the scallops to the skillet and sear them for about 2-3 minutes per side until they are golden brown and opaque in the center.
- Meanwhile, in a bowl, combine all the ingredients for the mango salsa and toss gently to mix.
- Serve the seared scallops with the mango salsa on top.
- Note: Scallops cook quickly, so avoid overcooking them to maintain their tender texture. This dish pairs well with a side of brown rice or quinoa.
