Greek Chicken Souvlaki Skewers:
Ingredients:
- 4 boneless, skinless chicken breasts, cut into cubes
- Juice of 1 lemon
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Wooden skewers, soaked in water for 30 minutes
Instructions:
- In a bowl, whisk together lemon juice, olive oil, garlic, oregano, salt, and pepper.
- Place the chicken cubes in a shallow dish and pour the marinade over them. Make sure they are well coated. Let them marinate for at least 30 minutes, turning once or twice.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken cubes onto the soaked wooden skewers.
- Grill the chicken skewers for about 8-10 minutes, turning occasionally, until they are cooked through and reach an internal temperature of 165°F (74°C).
- Serve hot with tzatziki sauce and a side of Greek salad or whole wheat pita bread.
